Abstract

This study aimed to evaluate the phytochemical composition and the antioxidant activities of water caltrop (Trapa natans L.) pericarp extracts obtained using 70% and 96% ethanol. Qualitative phytochemical screening was performed to identify major classes of bioactive compounds, while total polyphenol, flavonoid, and triterpenoid contents were quantified using spectrophotometric methods. Antioxidant activities were evaluated with FRAP, DPPH, and ABTS assays. The results indicated that both extracts contained diverse bioactive compounds, including polyphenols, flavonoids, saponins, and tannins. Notably, the contents of polyphenol and flavonoid increased after 28 days of storage, whereas triterpenoids levels decreased. Antioxidant activities varied depending on both the assay system and the extract type: the 70% ethanol extract (CA70) exhibited stronger reducing power in the FRAP assay, while the 96% ethanol extract (CA96) showed greater radical scavenging capacity in DPPH and ABTS models. Specifically, the FRAP value increased from 12.58 to 14.24 µM/mg, and the lowest IC50 value (1.26 µg/mL) was observed in the ABTS assay. Overall, these findings indicate that the water caltrop pericarp represents a promising natural source of antioxidant compounds, with potential applications in the food and pharmaceutical industries.
